How To Make Pasta Salad: Perfect Labor Day BBQ Side DIsh!

 


Pasta salad is a classic, easy to make dish that goes well with many types of occasions. With Labor Day just around the corner, the team at DRL Carpet would like to share our recipe for this iconic staple that is sure to please your friends and family at the cookout!

 

Ingredients:

  • 8 oz (about 2 cups) pasta (rotini, penne, or bow tie)
  • 1 cup cherry tomatoes, halved
  • 1/2 cup cucumber, diced
  • 1/2 cup red bell pepper, diced
  • 1/4 cup red onion, finely chopped
  • 1/2 cup black olives, sliced
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup fresh parsley, chopped
  •  For Dressing:

  • 1/3 cup olive oil
  • 2 tbsp red wine vinegar
  • 1 tbsp Dijon mustard
  • 1 tsp honey
  • 1 clove garlic, minced
  • Salt and pepper, to taste
  •  Instructions:

    1. Cook the pasta in a large pot of salted boiling water according to the package instructions until al dente. Drain and rinse under cold water to cool.

    2. In a small bowl, whisk together the olive oil, red wine vinegar, Dijon mustard, honey, minced garlic, salt, and pepper.

    3. In a large bowl, combine the cooked pasta, cherry tomatoes, cucumber, red bell pepper, red onion, black olives, feta cheese, and parsley.

    4. Pour the dressing over the pasta salad and toss until everything is evenly coated.

    5. Cover the pasta salad and refrigerate for at least 30 minutes to let the flavors meld. Serve chilled or at room temperature.
